Hey everyone what’s up so today I thought I would take you through one of everyones’ favorite recipes for Vegan blueberry muffins. These delicious homemade dishes to share with your family and friends.
These blueberry muffins will be ready before you know it, so let’s get started.
Process for vegan blueberry muffins
To make the Vegan Blueberry Muffins, you start out with two and 1/3 cup of all-purpose flour and add to that 2 teaspoons of baking powder make sure it’s fresh guys you don’t want outdated baking powder because then it won’t work.
You’re also going to add 1/2 teaspoon baking soda and 1/4 teaspoon of salt. The little twist that I add to this recipe is coriander. You’re gonna add 1/2 teaspoon of ground coriander. We really think that what makes this recipe really standout it’s what’s gonna make your friends say I really want this recipe.
Then you’re gonna take a wooden spoon and you’re gonna stir this all together to make sure you have no clumps.
Now to start out with our wet ingredients, we’re going to add 1/2 cup of plant milk I’m using almond milk here and you’re going to use the lemon juice by cut it in half and they’re going to squeeze about a tablespoons worth of lemon juice.
That’s how you get buttermilk it’s gonna make your Vegan Blueberry Muffins super dinner.
Now in the bowl of a stand mixer we’re going to add 3/4 cup of organic sugar and I do suggest using a stand mixer or at least a hand mixer for this recipe. Then I’m gonna add 3/4 of a cup of vegan butter you can also use coconut oil and it’s slightly melted not completely melted but also not completely at room temperature.
okay we’re gonna put it in the stand mixer and what we really want to do is to cream the butter. Then you use the granules of sugar to get some air into the butter to make sure it’s nice and light and fluffy.
There you have it very like lemony colored better for our lemon blueberry muffins. To this we’re going to add 4 tablespoons of aquafaba which is the juice left leftover in a can of chickpeas and our vegan buttermilk goes right in along with that then I add a tablespoon and a half of vanilla extract just very important.
We’re going to give that a good mix with my stand mixer. It looks kind of gross there but don’t you worry.
Now we’re going to add our dry ingredients but we’re gonna do it in two parts so I added half of my flour mixture in and we’re going to just mix it until it’s incorporated and then we’re going to add the remaining half and again we’re just gonna mix until it’s incorporated.
Then we’re going to add a cup and a half of blueberries. We’re using frozen here but you can also use fresh
And we’re going to use the spatula to incorporate that and also incorporate the flour that’s residing on the side of the bowl. Again I’m only gonna mix as far as I need to and no more.
I am using a greased a muffin tin and this is for jumbo muffins guys not a puny dozen muffins we’ve got six jumbo muffins. And lets put these mixture into it.
we’re going to put it in the oven at 425 degrees for 12 minutes and then reduce the heat for 350 for another 15 minutes.
when your toothpick comes out clean you know your Vegan Blueberry Muffins are ready look at how gorgeous they look. they look beautiful but let me tell you they taste even better.
so these muffins are so big I actually need to use a very large spoon in order to get them out of the muffin pan and let’s dive into this blueberry muffin.
look at those blueberries they’ve marbled our muffins so beautifully the muffin is moist and soft inside absolutely amazing.
