Hello, friends, welcome to our blog! we’re going to show you how to make our favorite breakfast food of all time, and we’re going to give you three different variations.

So we are making fluffy vegan gluten-free pancakes in three different ways, and each one is a little bit different, they’ve all got different toppings, they’ve all got different combinations, so hopefully, there’s something for every single person that’s reading this blog to enjoy.

We’ve got some that are really easy to make, but one’s made in the blender, one uses a combination of gluten-free flours, and one uses just one single flour.

All of these recipes are up on the blog already for you. So without further ado, let’s go ahead and get into our fabulous vegan gluten-free pancakes recipes.

Simple vegan gluten-free pancakes

So we’re gonna start our vegan gluten-free pancakes with our simple banana pancake, and we’re actually making this recipe in a blender.

So you’re gonna start by adding ingredients

1) Oats,

2) Quinoa flakes,

3) Baking powder,

4) a little bit of sea salt,

5) One whole banana,

6) And some almond milk.

And you can just pop the lid on your blender, pop it on the base, and blend this up until you have a smooth and creamy batter.

It’ll blend for about 30 seconds or so. Once you have the batter nice and smooth, just spray down a non-stick pan or whatever pan you want to use, and add some pancake batter onto the pan, just directly out of the blender is fine.

But once you see bubbles, just take a spatula and flip it over and just continue cooking it until it is fluffy and golden brown on the other side.

Then just continue with the rest of the batter, and you’re ready to serve ’em up.

So for serving, we like to do a nice generous stack, and we top it with coconut yogurt, sliced banana, as well as some chopped-up walnuts. It’s kind of like a banana bread flavor.

And then, of course, maple syrup. And then you can dig right in.

These, of course, freeze well, as do all pancakes, and you can also have fun with the toppings, so we definitely think you guys are gonna like this one ’cause it’s so simple and delicious vegan gluten-free pancakes.

2) Coconut vanilla vegan gluten free pancakes.

Our second recipe for vegan gluten-free pancakes is for coconut vanilla pancakes. We’re gonna start with quinoa flour on the bottom, as well as almond flour.

We’re also gonna add in some baking powder, sea salt, and stir that all together.

And then you can just add your liquid ingredients directly into the bowl, so it is coconut milk in the can, either full-fat or light, depending on whichever one you’d like to use, a flax egg, some maple syrup for sweetness, almond oil or another melted oil, and vanilla extract.

And stir that together until you have a smooth batter, and then to finish it off, we’re gonna just stir in some shredded coconut.

It gives it a really nice texture and a little bit of extra coconutty flavor.

Once you have that combined into the batter, we’re gonna cook it just like we did the last one.

Spoon some batter onto your pan, spread it out evenly with a spoon.

I find that the gluten-free batters are a little bit thicker than traditional pancake batter, so it helps to spread it out with the spoon.

And again, you’ll cook this one until bubbles start to form and then flip it over, and it probably takes about a minute, maybe two per side.

For serving, we also like to do coconut yogurt on top of this. Actually, all three have coconut yogurt on top. But you can do any toppings you want.

So today it’s coconut yogurt, a little bit of cashew butter, and some fresh raspberries on top, and then finish it off with some shredded coconut, and of course, maple syrup.

This is a kind of fun one just because it’s a little bit unique. It has more of a plain base flavor so you can really have fun with the toppings, but the shredded coconut on top and in the batter gives it that little tropical twist and also a really nice texture.

So these ones also freeze well, and they’re great for meal prep, but they’re great for breakfast, they’re great for brunch, they’re great for a snack. You really can’t go wrong with these vegan gluten-free pancakes.

3) Quinoa Vegan gluten free flour pancake recipe

Our last one is the quinoa flour vegan gluten-free pancakes recipe, and we’re gonna start with the liquid ingredients.

So we have almond milk, and we’re gonna add in some apple cider vinegar.

Stir that together and that will give you a buttermilk consistency, that’s how you make vegan buttermilk.

And once you have it combined, you can add in the rest of the liquid ingredients, which are two flax eggs, some maple syrup, some olive oil, or any oil you want, and then just stir that together until it’s combined.

You can actually also add vanilla extract if you want, that’s really good in this recipe too.

Once it’s combined, set this aside and we’ll move on to our dry ingredients, which is a base of toasted quinoa flour.

And then we’re also gonna add in some baking powder, and that’s it for the dry ingredients. So stir this together. You could do a pinch of salt if you wanted to, but I don’t find it necessary with this recipe.

And once it’s stirred together, pour in your liquid ingredients, stir it all together again until you have your smooth pancake batter.

For cooking, just like the other two recipes, we’re gonna cook this in a skillet on medium-low heat. Just spoon it on and kind of use your spoon to spread it out evenly.

Wait for those little bubbles to form, that’s how you know it’s gonna be cooking up nice and evenly. Once there are bubbles on top, you can flip it over.

Again, it’s about a minute, maybe two per side, and cook it until it’s done on the other side.

And then to finish things off, we add coconut yogurt. Then We add a drizzle of almond butter on top, finish it off with some fresh blueberries and some chia seeds, and of course, maple syrup.

The pure maple syrup, especially if it’s made in Vermont. So, this is definitely a really kind of unique-flavored pancake.

We think it’s absolutely delicious, especially with the toasted quinoa flour. We would really recommend that you toast the quinoa flour before you make these because it could be a little bit bitter if you don’t. But they’re nice and fluffy, they’re really easy to make, and this topping combination is a bomb, so you should definitely give it a try.
